Ice cream is indispensable during the warm spring and summer months or as a dessert after a nice dinner. Although we are increasingly cooking more and healthier, we are not real ice makers. This while making ice cream is actually not that difficult at all and you can make it to your own taste.

Making Ice Cream
There are two ways to make your own ice cream. On the one hand, the handy ice cream machine provides you with tasty ice creams in no time. On the other hand, we can of course make our own ice cream manually. It’s more artisanal, but just as delicious.
Ice Machine
The advantage of the ice cream machine is the lack of an iron discipline to walk to the freezer every two hours and to stir the fresh ice to prevent ice crystals. After the mixture has been applied, the ice maker makes delicious ice within half an hour. It is light and smooth due to regular turning. If you take one with a built-in self-freezing cooling element, you can make several types of ice cream per day.
A disadvantage is that the ice never becomes as hard as what you find in the store for scooped ice cream. You can partly compensate for this by putting the ice cream in the freezer for a while before serving it. Another drawback, as with so many kitchen appliances, is that the ice maker is a chore to clean. Some parts can go in the dishwasher, but unfortunately not all.
The last drawback is the refreezing of a cooling element after you have cleaned the ice machine. You have to take into account that you won’t be able to use your ice cream maker for a day or so. The cooling element has to get up to temperature again and that takes time. Get an ice maker with multiple settings.

This way you have the option to choose between the soft ice cream that you can eat immediately and the preparation of ice cream with, for example, scoops. Ice machines are available from about $ 500 up to$ 600. The difference lies in the options, the size or volume, the durability, the fact that it is an A-brand or not, and how powerful the motor is. Think carefully in advance about why you want the ice machines, what your frequency of use will be, etc., and adjust your purchase accordingly.
Making ice cream yourself
If you have decided not to buy an ice cream machine, you can always get started yourself. You will need the following materials:
- A large bowl that can hold all the ingredients and that can go in the freezer
- Small containers for all loose ingredients
- Metal spoon
- Whisk or stick blender
- Ladle
- Rubber spatula
- Ice cream scoop
You can choose to partially heat up the ingredients first, but there are also plenty of recipes where you can simply mix the ingredients cold. This is especially useful for the beginner. Also handy are the powders where you just add cold cream and put the whole thing away in the freezer. Here you make a simple but excellent base. In the freezer, you always have to stir everything well every two hours. Otherwise, crystals can form in the ice and these are hard and do not make the ice any better.
Ingredients And Application
Basic Recipe
Do not work with powders, but make the ice yourself; that is of course also possible. Mix the following to get a good base:
- 250 ml semi-skimmed milk (whole milk is also possible, then the taste becomes a bit fuller)
- 200 ml whipped cream
- 3 egg yolks
- 100 grams of caster sugar
- 10 grams of vanilla sugar
Mix the egg yolks well with the sugars and make sure it becomes airy. Add the milk while stirring and then whip the cream. Then add this to the mixture and mix until it is well airy. Ready to possibly add a flavor in the form of, for example, the desired type of fruit. This way you can pour the whole thing into the ice cream maker or into the freezer (> – 18 degrees) and don’t forget to scoop this whole thing regularly.
Don’t keep ice cream in the freezer for more than about 10 to 12 days, as the taste will gradually wear off. Do not refreeze ice that has been out of the freezer for a long time or has completely thawed. So if you only take a little, put it back in the freezer immediately or divide the ice cream that is ready into smaller containers immediately.
Addition
Adding fresh fruit gives the ice cream that little bit more. Add the cleaned pieces of fruit to the freezer, use the juice of the fruit (or use both), and mix it all together before putting it in the freezer. If you want to add fruits from a can, you can do that too. However, since this is already sweeter, you can put about 25 to 30 grams less sugar in the basic recipe. Finish the whole with a few drops of lime or lemon juice over the ice with fruit.
